Beef Wellington is a true British classic. Using juicy, grass-fed British fillet steak, dry aged for up to 28 days, with rich mushroom duxelles encased by hand in a buttery puff pastry with lattice top - in 3-4 portions.

Cooking instruction:
1. After defrosting, leave the beef wellington the baking paper. Allow to come to room temperature for at least 10 minutes.
2. Preheat oven to 230°C

3. Brush pastry with beaten egg yolk. 
4. Place the wellington (still on baking paper) onto the preheated baking tray and cook for:
Rare - 15 minutes
Medium - 20 minutes
Well done: 25 minutes
5. Rest for 10 minutes
